I really wanna use GlassWire, it seems to be amazing but I need to be sure that it doesn’t increase latency on the network, specially TCP packets, I am very concerned about that 'cause low latency is crucial to some of my applications.

No. We use a Windows API to access the data and I believe that API does not cause any latency. We have several million people who have installed our software and nobody has ever reported latency.
